It's a bit more than just Sagarin. In 1950, NC''s were awarded BEFORE bowl season.
Oklahoma went into the Sugarbowl 10-0. UK was 9-1 and beat them in the final game of the season.

So both teams ended 10-1, but UK won the only head to head game. For UCF to have the same claim they would have needed to beat Bama in the final game , yet have Bama awarded the championship.

One really small problem with your line of thinking. As you correctly pointed out, the Sooners had already been crowned champs. They had NOTHING to play for, and nobody got too fired up to play the likes of UofK even with Bear Bryant. Ever.

One Yuge problem. One loss UK did defeat #1 undefeated Oklahoma. However, That one loss came at one loss Tennessee who went on to defeat Texas in their bowl game and finish with an identical record with the Cayuts.

The AP awarded OU the national championship before the bowl games were played. Other organizations awarded the championship to Tennessee by a vote of 18-11.

We can claim a national championship, we just can't put "NCAA" on it. And that's easily accomplished. There's not a damn thing they can do about the banners below.

The reason we don't have a 2013 banner up there is because the clown show refuses to replace it. It's not in their personal interests to do so...
